Non is the main Italian negation word, translated as nicht in German. It negates verbs, adjectives, and other words, and can also mean kein (not any) or verboten (forbidden) depending on context.

Mir gefällt Kaffee nicht.

Non always comes before the verb it negates (Non vado = I'm not going). Unlike English, Italian allows double negatives with words like niente or nessuno (Non vedo niente = I see nothing). Do not place non after the verb or at the end of a sentence.
